The time before Christmas has a sweet and magical impact on me. I find myself in the kitchen even more often than usual.

Which actually means that instead of 14 hours a day I spend 20 hours here now.

Like yesterday, for example, I made 82 cookies and I don’t even know how that happened to me.

Strange.

 

Anyhow, these lovely Bowtie Cookies were one of those I made yesterday.

The dough has cream cheese in it. It remotely resembles puff pastry, but it is less layered and less fatty. And oh so delicious!

The dough is filled with jam. You wouldn’t believe how gorgeous that combination is.

Let me show you how I prepared them…

Here’s what we need.

1. In a large bowl, with an electric mixer, beat together the cream cheese, butter, sugar, and salt on medium speed until light, about 2 minutes.

 

2. Then on low speed, gradually beat in the flour just until mixed. A crumbly mixture will form.

3. Using your hands, pat the crumbly mixture together to form a dough ball.

Oh, and the face – I had to. Again. It’s addictive. Sorry!

4. Preheat the oven to 350 °F (175 °C) and line a baking sheet with parchment paper.

 

5. Now, on a lightly floured surface, roll out the dough into a square or rectangle about 1/8 inch (3 mm) thick.

 

6. Cut the dough into even 2.5 x 2.5 inch (6 x 6 cm) squares.

I’ve found out that my pizza cutter works best when it comes to cutting pastry.

It’s perfectly sharp.

And pink.

I’m in love with it!

7. Place 1 teaspoon of the filling in the center of each square.

Use a really thick jam. There are even jam brands out there that are meant for baking. Get one of those, preferably.

Also, when I was making the first batch of these cookies I was a little too generous and placed a little more than one teaspoon of the filling in the center. And I also spread it.

I don’t recommend that.

Although the cookies looked amazing before baking, if there’s too much jam, it has a tendency to leak while baking.

In the second batch I was less generous.

And the cookies leaked less, they almost didn’t leak at all.

7. Back to the instructions… pull 2 opposite corners of the square into the middle, and pinch the edges together to seal.

Pinch the edges well, don’t give them a chance to open back into the square shape while baking.

8. Place the cookies on the prepared cookie sheet, spacing them about 1 1/2 inches (4 cm) apart.

 

9. Bake at 350 °F (175 °C) for about 12 minutes or until lightly golden.

10. Let cool on the cookie sheet for 1 to 2 minutes, then transfer to wire racks.

 

11. Dust the tops with sifted confectioner’s sugar while still warm, then let cool completely.

Heavenly Banana-Pudding Squares

These squares are truly heavenly.

Especially for banana and pudding lovers like me, for example.

So if you feel like something delicious like this, here is the recipe…

To prepare the Heavenly Banana-Pudding Squares you need:

1 package (400 grams) puff pastry

4 ripe bananas

1 1/2 packets (180 grams) sponge biscuit rounds (or lady fingers)

1 packet  powdered vanilla pudding (without sugar)

1 packet powdered banana pudding (without sugar)

12 tablespoons sugar (for the pudding)

4 cups (1 liter) milk (or any amount the two puddings call for in their instructions)

confectioner’s sugar to sprinkle on top

1. Let the puff pastry thaw according to the instructions on the package.

2. Preheat an oven to 350 F (175 C).

3. Roll out the dough on a floured surface to twice the size of the baking pan you are going to use (we need one layer of the puff pastry for the bottom and one for the top of the pie).

Using a knife, cut the rolled out dough into two equal parts.

Transfer the first sheet onto the bottom of the greased pan.

4. Now we are going to need the sponge biscuit rounds. They are soooo yummy – I grew up on them.

Place the biscuits over the puff pastry layer.

Nice!

5. Take 4 sweet ripe bananas.

Cut each of them into two halves…

… and then into slices.

Just like this.

6. And onto the biscuits they go.

7. Now it’s the right time to prepare the pudding (follow the instructions on the packet).

Mix the vanilla pudding with the banana pudding and prepare them both together.

Mmmmm… – this already smells heavenly.

8. Pour the pudding over the biscuits and bananas…

… and spread it with a spoon until everything is nicely covered with the pudding.

9. Cover the pudding layer with the second part of the dough.

The pudding is going to release steam while baking so it’s fine to help it a bit by creating these little steam vents.

(Since the pie tends to rise while baking I recommend placing a piece of aluminium foil right underneath the baking pan – onto the bottom of the oven – just in case a few drops of pudding overflow. The aluminium foil will catch any spills and you can remove it from the oven easily.)

10. Bake for about 35-40 minutes.

Remove from the oven and let set and cool.

Sprinkle with some confectioner’s sugar if you feel like it.

Oh, and cut into squares of course.

Store in a refrigerator and – most importantly – ENJOY Dear Friends!

Apple Turnovers

What kind of fall would it be without delicious apple turnovers.

These are juicy, full of walnuts and have that great christmasy taste of cinnamon.

When I tasted them they left me completely and utterly speechless.

And the same happened to my boyfriend.

So it has been a pretty quiet household today.

Ingredients:

3 frozen puff pastry sheets, thawed

3 larger apples, peeled, cored

6 tablespoons chopped walnuts

3/4 cup (150 grams) sugar

1 teaspoon cinnamon

1 teaspoon corn starch

2 teaspoons vanilla extract

1 large egg, lightly beaten

1. Preheat an oven to 350 F (176 C).

2. Line a baking sheet with parchment paper.

3. Cut apples into tiny little dices (about 1/4 inch – 0,6 cm).

4. In a bowl, mix together the apples, walnuts, sugar, cinnamon, vanilla extract and corn starch.

5. Unfold the thawed pastry sheets on a floured surface.

Cut them into 5-inch-by-5-inch (13cm) squares.

Place about 3 teaspoons of filling on each square leaving about 1 inch (2,5 cm) border.

6. Use a pastry brush to brush the lightly beaten egg on the border of the pastry.

7. Fold each pastry into a triangle.

Try to give the filling no chance to leak. (But still it will, that’s the rule.)

8. Crimp edges with a fork.

Brush the tops with the egg.

Cut 3 small steam vents in the top of each turnover. (Do it after you’ve applied the egg, otherwise you would seal the vents shut again.)

9.  Bake for 20 minutes or until puffed and golden.

Puff Pastry Cheese Twists

I find these cuties to be a great choice for appetizers.

Your guests will surely love them!

The story of me finding the inspiration to prepare them starts on our recent vacation in Hungary.

Actually, I saw it on TV while trying to fall asleep in a hotel.

Kids were preparing them with a little help from some lovely lady.

But the kids made their own dough.

And I didn’t.

The kids DID.

So you need:

1 package of  that puff dough I was talking about

as much ketchup as you like

as much hard cheese as you like (the stronger in flavor the better)

as much oregano as you like (fresh or dried)

1 egg to spread on top

1. Preheat an oven to 350 F (176 C).

2. On a floured surface roll out the thawed dough into a rectangle shape.

3. Spread ketchup over the surface.

Sprinkle with grated cheese and oregano.

4. Divide the sheet of dough visually in half and fold it over to form two layers.

Roll gently with a rolling pin to seal.

5. Cut into 1 1/4 inch (3 cm) strips.

6. Twist the strips.

Place them on a baking sheet, pressing down the ends.

Brush the pastries with the egg mixture and sprinkle lightly with oregano.

7. Bake for 13 minutes or until golden brown.

Remove the pastries from the baking sheet and let cool on a wire rack.
