Serves: 6 servings

Ingredients
  • 3 boneless and skinless chicken breasts, cut into 1-inch (2.5 cm) squares
  • salt and pepper
  • 3 tbsp olive oil
  • 1 medium onion, finely chopped
  • 6 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp red pepper flakes
  • 6 cups (1400 ml) chicken broth
  • 14 oz (400 grams) penne
  • 1 medium broccoli, cut into florets
  • 1 cup (190 grams) oil-packed sun-dried tomatoes, coarsely chopped
  • ¾ cup (170 ml) heavy cream
  • ¾ cup (80 grams) grated Parmesan
  • 1 tbsp lemon juice
Instructions
  1. In a large skillet or pot, heat 2 tbsp olive oil over medium heat. Add the chicken, season with salt and pepper. Cook until the chicken is cooked through (about 12 minutes). Place the chicken in a bowl and set aside.

  4. Stir in the broccoli florets and sun-dried tomatoes, cover and cook until the broccoli is almost tender (4-5 minutes).
  5. On medium-high heat, stir in the cream, Parmesan, chicken and allow to simmer uncovered until the chicken is heated through.
  6. Remove the skillet from the heat, stir in the lemon juice.
  7. Add more salt and pepper to taste if necessary.

Honey And Mustard Chicken With Bacon, Mushrooms and Cheese

honey mustard chicken with bacon, mushrooms and cheese recipe

This is definitely one of the best chicken meals I have ever had.

Well, who could say no to a chicken that is marinated in honey and mustard sauce and then baked with luscious layers of bacon, mushrooms and cheddar cheese on top. Not me, that’s for sure!

And being rather quick to prepare, this recipe makes a good choice for weekday dinners as well.

Here’s how to make the magic happen…

We’ll need these ingredients.

1. First, make the marinade by mixing together the mustard, honey and lemon juice.

2. Cover the chicken with the marinade and refrigerate for two hours.

3. When the chicken is marinated, preheat the oven to 350 °F (175 °C).

4. Use a large pan or skillet to fry the bacon on the stove until mostly cooked (it will cook more when baked in the oven). Remove the bacon onto a separate plate.

5. Using the same pan and what’s left of the bacon, fry the chicken (discarding leftover marinade). Cook a few minutes on each side, but not until cooked through – the chicken will finish cooking in the oven.

6. Place the chicken in a large baking dish.

8. Place the sliced mushrooms in the same pan where the chicken was cooking. Add about 1/2 tsp salt and cook for about 5-7 minutes. Then set aside.

9. Assemble the chicken by topping it with the bacon…

… and lastly with the cheese and parsley.
