Ingredients
  • 16 oz (450 grams) bow-tie pasta
  • 1 stick (110 grams) unsalted butter
  • 32 oz (950 ml) chicken broth
  • 2 tbsp olive oil, divided
  • 3 chicken breasts, cut into bite-sized cubes
  • 2 cups (200 grams) sliced mushrooms
  • 2 cups (320 grams) halved cherry tomatoes
  • 2 cups (120 grams) fresh spinach
  • salt
  • ground black pepper
  • ¾ tsp red paprika powder
  • 1 tsp dried garlic powder
  • ½ tsp curry powder
  • ¼ tsp cayenne pepper
  • 1 tsp dried parsley
  • 1 tsp dried chives
  • Parmesan cheese (optional)
Instructions
  1. In a large pot, melt the butter over medium heat. Continue to cook until it bubbles and turns a caramel brown color.
  2. Add the pasta to the pot and let cook for about 1 minute, stirring frequently.
  3. Add the chicken broth to the pot and stir.
  4. Season with ¼ tsp salt, ¾ tsp red paprika powder, 1 tsp dried garlic, ½ tsp curry powder, ¼ tsp cayenne pepper, 1 tsp dried parsley and 1 tsp dried chives. Stir. Simmer until all liquid is absorbed by the pasta, stirring occasionally. If all liquid is gone before your pasta is done, add more water and continue to simmer.
  5. While the pasta is simmering, in a skillet, add 1 tbsp olive oil and place over medium to high heat.
  6. Add the chicken to the skillet, season with about ¾ tsp salt and ¼ tsp ground black pepper. Cook until done.
  7. Remove the chicken from the skillet into a separate bowl. Cover with foil.
  8. Add 1 tbsp olive oil in the skillet. Add the mushrooms and tomatoes to the skillet. Season with a little salt. Saute until the mushrooms are soft.
  9. Add in the spinach and cook until the spinach has wilted.
  10. Once all of the chicken broth has been absorbed into the pasta, toss the mushroom-tomato-spinach mixture and the chicken into the pot with the pasta. Stir well to combine. Sprinkle with Parmesan cheese and serve.

1. Cook the pasta according to the package instructions. Drain well.

2. Cook broccoli in salted water for about 5-7 minutes, until cooked but still crunchy. Drain well, reserving about 1/2 cup (120 ml) of the cooking water for the chicken.

3. Combine pasta and broccoli in one pot.

This is definitely one of the best chicken meals I have ever had.

Well, who could say no to a chicken that is marinated in honey and mustard sauce and then baked with luscious layers of bacon, mushrooms and cheddar cheese on top. Not me, that’s for sure!

And being rather quick to prepare, this recipe makes a good choice for weekday dinners as well.

Here’s how to make the magic happen…

We’ll need these ingredients.

1. First, make the marinade by mixing together the mustard, honey and lemon juice.

2. Cover the chicken with the marinade and refrigerate for two hours.

3. When the chicken is marinated, preheat the oven to 350 °F (175 °C).

4. Use a large pan or skillet to fry the bacon on the stove until mostly cooked (it will cook more when baked in the oven). Remove the bacon onto a separate plate.

5. Using the same pan and what’s left of the bacon, fry the chicken (discarding leftover marinade). Cook a few minutes on each side, but not until cooked through – the chicken will finish cooking in the oven.

6. Place the chicken in a large baking dish.

7. Sprinkle with salt, pepper and paprika.

8. Place the sliced mushrooms in the same pan where the chicken was cooking. Add about 1/2 tsp salt and cook for about 5-7 minutes. Then set aside.

Kung Pao has been one of my favorite chicken recipes ever since I can remember.

When I found this finger-licking recipe from Bobby (blogchef.net), I immediately knew my fate was sealed. It looked so delicious I needed to prepare it as soon as possible.

Here’s how Bobby himself describes this recipe: ‘Kung Pao chicken first originated in central-western China and has become very popular in the United States. This is the westernized version of kung pao chicken consisting of wok fried chicken pieces, roasted peanuts, scallions and a spicy sauce. For those of you that have been waiting for a Chinese chicken recipe that doesn’t use a deep fryer – this is it.’

Here’s all that we need.

1. To make your Kung Pao Chicken, combine the chicken and cornstarch in a bowl and toss to coat.

2. Heat the sesame oil in a wok or pan over medium heat.

3. Add the chicken and stir fry 7-9 minutes or until no longer pink inside.

4. Chop the green onions and mince the garlic cloves.

5. Add the green onions, garlic, red pepper flakes and powdered ginger to the wok or pan and stir fry for about 30 seconds.

6. Combine the vinegar, soy sauce and sugar in a small bowl. Mix well.
