Pavlovas – what a romantic way to name a dessert, isn’t it?

In fact, Pavlova, this beautiful and noble looking dessert is actually nothing else but meringue. Pure meringue, crisp on the outside and soft on the inside, a kind of dessert which is super-simple to prepare.

Pavlovas can be made big or small. I went for the smaller, individual version this time and filled my meringue shells with wonderful, jam flavored whipped cream and delicious fresh fruit. Yum!

To make your own individual Pavlovas, just follow these simple step…

Here’s what you need.

1. Line 2 baking sheets with parchment paper.

2. Preheat the oven to 350 °F (175 °C).

3. Whisk the egg whites with the salt until they’re holding firm peaks but are not stiff. Gently add in the sugar, spoonful after spoonful, still beating, until you have a bowl full of gleaming and satiny meringue. Sprinkle the cornflour, a few drops of vanilla and the vinegar on top and fold in to combine.

4. Spoon the meringue onto the lined baking sheets, creating 6 meringue circles per one sheet, using about 3 tablespoons of meringue mixture per one circle. Spread the circles to make them about 4 inches (10 cm) wide. Use the back of your teaspoon to make an indentation in the center of each circle to hold the cream and fruit later (it helps if the teaspoon has been dipped in water beforehand).

5. Put into the lower part of the oven, reduce the temperature to 300°F (150°C) and bake for 25 minutes (switch the baking sheets halfway through the baking process so that the meringue shells placed on the top baking sheet don’t get too brown). Turn the oven off and leave them in for about 35 minutes, then take out of the oven to cool.

6. In the meantime, you can prepare your fruit (cut it if necessary). You can also prepare the cream filling.

To prepare the cream filling, whip the cream until stiff. Then add the sour cream and the jam and mix to combine. Add powdered sugar to taste. Easy! And oh-so-good!

7. Fill the cooled meringue shells with the cream and and garnish with fruit. Finally dust with powdered sugar.

I made this recipe yesterday and was super-pleased when I tasted it. It is so scrumptious! This is the kind of dessert, which – if I had my own restaurant – would definitely make it to the dessert list.

The bottom layer of this yummy cobbler consists of lightly sweetened fresh fruit and the top layer is simple vanilla flavored batter that is spooned over the fruit layer. It really could not be any simpler – just the kind of thing that these hot and lazy days of summer call for.

1. Gather your fruit (I used fresh strawberries and blueberries). Set aside some for garnish.

Cut the fruit into chunks, if necessary.

2. Place the fruit into a medium bowl and mix together with 4 tablespoons of brown sugar.

3. Distribute the fruit mixture evenly among 7 baking dishes (ramekins).

4. In a larger bowl, whisk together the flour, sugar (1/2 cup – 110 grams), baking powder and salt.

5. Stir in the eggs, milk and vanilla extract.

6. Last stir in the melted butter.

7. Spoon the batter over the fruit using about 3 tablespoons per one ramekin.

8. Bake at 350 °F (175 °C) for about 25 minutes or until a toothpick inserted in the batter part comes out clean.

9. Serve warm garnished with vanilla ice cream and fruit.

1. Blend the strawberry layer ingredients until smooth. Add sweetener to your taste. You want the mixture as thick as possible.

Place in a large cup/mug and set in the freezer while making the next layer.

2. Blend the tropical layer ingredients until smooth. Add sweetener to your taste. You want the mixture as thick as possible.

3. Fill a glass up 1/2 of the way with the strawberry layer and then gently spoon the tropical layer over top. Some of the tropical layer will sink into the strawberry layer but if it’s thick enough it will start to pile on top.

This is actually what stayed in my head after tasting these delicious cheesecake filled strawberries. And I think that it pretty much sums up what this whole experience was about… just PURE YUM!

I can assure you that preparing this lovely summer treat is ultra-simple.

All you need is about 2 pounds (1 kg) larger fresh strawberries, 8 ounce package (250 grams) cream cheese (softened), 4 tablespoons powdered sugar (depending on how sweet you want the filling), 1 teaspoon vanilla extract and about 1 ounce (30 grams) graham cracker (or butter cookie) crumbs.
