2. Their taste and their texture resembles cinnamon sugar doughnut holes, even though these are muffins and they are baked.
3. I secretly fell in love with Javier Bardem today after watching Eat, Pray, Love… but psst, that really is a secret (sorry but I just need to share these important facts with you).
4. These mini muffins are super quick to make. Not even half an hour will have passed from when you start the work just until you taste your first muffin.
5. With their generous amounts of nutmeg and cinnamon, these babies provide a super-nice fall experience.
6. Which reminds me – Javier Bardem is super-nice too!

To make your cinnamon sugar donut mini muffins you will need these simple ingredients.

1. First, preheat the oven to 375 degrees F (190 degrees C).

2. Grease 24 mini-muffin cups (or you can brush/spray them with some vegetable oil). Then dust the cups with a little flour.

3. In a bowl of your electric mixer, combine the sugar (1/2 cup – 100 grams), the margarine (1/4 cup – 60 grams), the nutmeg, the milk, the baking powder, and the flour.

Mix until just combined, about 20 seconds. In muffin world, it is good not to overbeat the batter. And in muffin batter, lumps are perfectly all right. It might just be the simplest batter ever.

The idea comes from lovely and cute Jessica Seinfeld. She presented the recipe on Martha Stewart’s show recently.

The recipe is included in her cook book called ‘Deceptively Delicious’ where she shares very smart secrets on how to trick your kids into eating healthy stuff.

Cool, huh?

 

To tell you the truth, I am kind of blushing now. I need to own up to something. But it’s a little hard… because I think I’ve done something really naughty.

Maybe worse than naughty.

The original recipe includes chopped chickpeas and I just left them out wickedly.

And, I added salt.

Aaaaa…

I can only hope that the universal committee for healthy living will forgive me.

But I think they have to because these muffins tasted just amazing.

Here’s what we need.

1. First, preheat the oven to 400 °F (200 °C).

2. Then lay the strips of bacon in a large frying pan (or skillet, or griddle).

3. And fry them until crisp.

4. Slice the bacon thinly into 1/2-inch pieces.

You can also cut the bacon with kitchen shears if that makes the job easier for you.

8. Now we need six standard muffin tins. Metal or silicone, both are good.

Coat the cups with some vegetable oil (you can brush the cups with the oil or use non-stick cooking spray).

 

9. Divide the egg mixture evenly among the prepared cups.

10. And sprinkle with the bacon.

11. Bake at 400 °F (200 °C) for 13 – 15 minutes or until the eggs puff and are cooked through.

12. Then remove your egg muffins from the muffin pan and let them cool slightly before serving.

Chocolate Chunk Muffins

Today I have prepared something lovely for all you chocoholics out there!

You surely can’t escape this.

THE CHOCOLATE CHUNK MUFFINS!

They are soft and moist and the chocolate chunks melt in your mouth and …,

… they just make you close your eyes and go “Mmmmmm…”.

By the way, did you know that the word “muffin” comes from the French word  moufflet which is often times applied to bread and means soft?

Well, I didn’t… .

And did you know that three states in the United States of America have adopted official muffins?

Minnesota has adopted the Blueberry Muffin, Massachusetts fell in love with the Corn Muffin and New York took on the Apple Muffin as its official muffin of choice.

Isn’t it great?

Today I am officially pronouncing the Chocolate Chunk Muffin my official muffin of choice!

Ingredients:

3 cups (390 grams) plain flour

3 tablespoons cocoa powder

1 1/2 tablespoon baking powder

1 1/2 cups (300 grams) sugar

200 grams (8 rows) dark cooking chocolate, chopped

1 1/2 cups (360 ml) milk

3/4 cup (170 grams) butter, softened

2 eggs

1. Preheat an oven to 356 F (180 C).

2. Sift the flour, cocoa, baking powder and sugar into a large bowl.

Stir to combine.

3. Add the chocolate chunks and stir again.

4. Whisk the eggs, butter and milk.

5. Then, using a spatula or wooden spoon, stir the two mixtures together until everything is moistened.

Yes, there will be lumps but small lumps are fine.

6. Spoon the mixture into muffin pans…

7. … and bake for 20-25 minutes.

Mmmm, lovely!

Leave in the pan for 5 minutes before removing.

Muffins are best when freshly made, but for muffins anytime you want them, wrap them (cooled) in plastic and freeze for up to two months.

Thaw, still wrapped, at room temperature.
