1. Blend the strawberry layer ingredients until smooth. Add sweetener to your taste. You want the mixture as thick as possible.

Place in a large cup/mug and set in the freezer while making the next layer.

2. Blend the tropical layer ingredients until smooth. Add sweetener to your taste. You want the mixture as thick as possible.

3. Fill a glass up 1/2 of the way with the strawberry layer and then gently spoon the tropical layer over top. Some of the tropical layer will sink into the strawberry layer but if it’s thick enough it will start to pile on top.

4. Garnish with a gummy candy skewer or fruit skewer.

The process could not be simpler, really…

1. First, put the sugar, honey, salt and water into a small or medium pot or saucepan.

2. Heat on medium heat and stir until a smooth slurry is formed.

3. Then stir in the raw sesame seeds.

4. Cook the sesame seed mixture, stirring often, until the mixture turns that beautiful amber caramel color, about 5 to 10 minutes.

Warning! Warning! Try to avoid any spoon licking, this mixture is super-hot.

 

Also, at first the mixture will appear a little too dense, but the hotter it will get, the more ‘liquidy’ it will become. So do not add more water (do not be like me in my first batch), that is really not necessary.

 

5. Remove the pot from the heat. Stir in the vanilla extract and the butter. Once the butter has completely melted into the mixture, stir in the baking soda. The baking soda will help create tiny pockets of air, making the brittle a little lighter. And who wouldn’t want that, right?

6. Pour the mixture out onto a baking sheet lined with lightly sprayed (oiled/greased) piece of tin foil. Or just use Silpat to line the baking sheet.

7. Once your brittle has cooled and hardened completely (about 15-20 minutes), break it into pieces.

Heavenly, wonderful, amazing pieces.

Candied Walnuts …and ‘Oh! Nuts’

Recently, one very sweet person approached me offering a wonderful chance to grab and taste a few products from a company called ‘Oh Nuts’.

So I grabbed them and tasted them and now I’m in heaven…

There were yummy Dried Mango Slices.

There were Dried Turkish Apricots.

Mmmm…

Me love apricots!

And then there were walnuts.

Immediately I knew that me and these walnuts could make really great friends.

In other words, I decided to make some candied walnuts.

Yay!

Have you ever tried that?

Well, you definitely should. It’s so much fun and the taste …mmm …that taste is just unbelievably scrumptious.

To prepare candied walnuts you need 1 1/2 cups (50 grams) walnuts, 1/2 cup (100 grams) granulated sugar and a pinch of salt.

It’s this simple.

 

1. First, toast the walnuts in the oven at 350 F (175 C) for about 5 minutes.

2. Then pour the sugar into a saucepan.

3. Stir the melting sugar with a wooden spoon. Try to break any lumps that would form.

4. Keep melting the sugar until it’s liquid and it has reached this beautiful amber color.

I always get amazed when this magic happens.

5. Then throw the nuts into the caramel.

Yes, that is caramel what we’ve got in the saucepan.

Isn’t that amazing?

 

6. Stir it all together quickly to cover all the nuts with the sugar mixture.

7. As soon as the walnuts are coated, spread them out on a baking sheet.

You can line the baking sheet with parchment paper.

 

7. Use two forks to separate the walnuts from each other.

Try to work quickly at this stage since there’s only about 30 seconds until the caramel hardens.

8. Sprinkle the nuts with salt and let cool completely.
