Tangerine Bundt Cake

tangerine bundt cake recipe with step by step pictures

I love bundt cakes.

It seems that I tend to celebrate the arrival of each season with them.

Somehow, it always works.

To welcome this year’s spring and Easter, I decided to go for a wonderful, fresh and invigorating citrus flavor.

And here it is.

In fact, the big clever books of baking would call this cake a chiffon cake.

Chiffon cakes are light and moist cakes that use vegetable oil instead of butter. That is the main reason why these cakes do not tend to harden or dry out as traditional butter cakes might.

That is positive, I think.

Frankly, this cake tastes just lovely.

Plus, there’s this delicious citrus glaze that increases the whole fresh experience immensely.

Here’s how you can make it too…

1. First, preheat the oven to 325 °F  (165 °C).

2. Wash one tangerine under running water thoroughly.

Pat it dry with a kitchen towel.

Then grate one tablespoon plus one teaspoon peel. We are going to need one tablespoon for the cake and the remaining teaspoon for the glaze.

4. Pass the juice through a fine sieve to get rid of seeds.

Because there might be seeds.

They are naughty and tend to sneak into your juice unobserved.

5. Now prepare your dry ingredients.

In a large bowl, stir together the flour, baking powder, salt, and 1 cup granulated sugar.

Or use your cooking/baking spray.

10. Then dust the pan with some flour lightly.

But be careful at this point, don’t miss a spot. The more attention you pay to this process, the easier it will be for you to remove the cake from the pan after baking.

Note: You can use an angel food cake pan instead, if you wish to.

11. Using a spoon or a ladle, pour the batter in the pan.

Then, using a knife, carefully loosen the cake from the edges and the center of the pan.

Oh, what a lovely treat to welcome spring with! My mouth is watering at the mere thought of the tangerine flavour infusing each and every bite. But the child in me wants to know… what and where from are those adorable confetti?

Hi lovely Janka! Those confetti are three different things – little hearts, bears, and sugar rice. I just put everything I’d found on that cake. I bought them in a regular grocery story around here. 🙂 Petra

Mmm, love citrus baking. Waiting for tangerines to come into season where I am (New Zealand) so I can make a cake like this and tangerine curd. Cheers for the bright and pretty pictures!

Honestly, I don’t think I have ever seen tangerines at my local grocery store, but I haven’t really looked for them either? I’m not even sure what they taste like, but I am sure I would love the flavor, because I love all things citrus and your cake sounds delicious!

Wow, your bundt cake is a feast for the eyes as well as for the palate. I wish I could get mine to look half as pretty as yours. I have a sweet treat linky party going on at my blog and I’d like to invite you to stop by and link your cake up. http://sweet-as-sugar-cookies.blogspot.com/2011/03/sweets-for-saturday-10.html

I know it’s been a while since you posted this, but I made it last year for Easter and I’ve had this page in my favourites ever since! Lovely cake!

I have a question though. Me being a bit on the silly side, bought a bundt tin from Amazon without looking at the measurements first! Now I have a teeny tiny bundt tin! Do you think I could make exactly the same recipe, and pour it into the mini tin, with the same delicious results?

If you get this message, please drop me a line =)

    zoom yummy says:

    Hello dear Kayleigh!

I am very glad you like the cake. You can sure use this recipe to make a smaller cake – you would end up having two or even three of them, depending of the size of your new bundt tin.

The only thing that should be done differently is decreasing the baking time – just do the ‘wooden skewer’ test sooner than this recipe recommends.

    I hope I helped a little.

Happy baking to you… and happy Easter too!

    Petra 🙂
