Chicken Stew With Tomatoes and Onions

These are the ingredients.

Simple, right?

1. Oh my, what’s happened here?

Okay, okay, I’ll try to be more descriptive… start by slicing the onions.

2. Then pour the olive oil into a larger pan and heat it up.

3. Place the onions into the pan and fry until soft and yellow.

4. Then peel and slice the garlic and add it to the onions.

Stir-fry for about 30 seconds.

5. Cut the chicken breasts into about 2-inch (5 cm) long strips.

6. Add the chicken to the pan.

7. Season with pepper (I added about 1/4 teaspoon).

8. Add salt (I used about 1 1/2 teaspoon) and stir thoroughly.

9. When the meat becomes white-ish on all sides add the canned tomatoes.

10. Then it’s time for the thyme… and oregano to join the show.

Stir thoroughly again.

11. Finally, add the mustard (not much, just a little) and the chicken broth and give it all a good mix.

Bring to boil and let cook for about 15 minutes.

And that’s all, dear friends – this simple.

Because I just love simple.

Simple is good for me.

    This is a really good dish; I use chicken a lot and I often run out of idea on what to do besides grilling them! You have just given me a great idea and I thank you for that (I am glad to see you are not shy when it comes to using garlic!)

    Hey I am just finishing up making this and it smells amazing. I love simple one-pan dishes.

    I want to make a suggestion for your recipes though. Instead of saying 2/3 can of tomatoes, it would be helpful to know the exact amount since there are different sized cans of tomatoes. Also, I sliced 3 onions and it was way too much so I ended up using about 1 1/2 to 2 onions. (i.e. 2 cups crushed tomatoes or 1 cup sliced onions)

    I hope this helps! I don’t mean to be a brat, these are things I noticed while making this dish. Thanks for the recipe!

    Served it over pasta. AMAZING. Quick question though: What kind of canned tomatoes did you use (i.e. crushed, whole, etc)? Mine didn’t turn out as thick as yours looks in the pictures, so I thought I’d check and see . . . thank you for your fabulous website.
